Barding fat to measure

Sheets of barding fat, 2 to 2.5 mm thick, serve both decorative and functional purposes. Several popular dishes for which barding fat sliced to measure can be used include tournedos, brochettes, paté, terrines and filet de saxe.

Our custom-sliced barding is really useful. We cut it to the desired dimensions. That way, you save twice over: there’s no waste, and you save on processing costs.

BARDING SHEETS

Our barding sheets are placed on plastic film. This has numerous advantages. The sheets are cut precisely to your measurements and ensure a refined finishing touch for your liver patés, terrines, block patés, pie fillings and so on.

Moreover, you save twice over with custom-cut barding sheets: there is no waste, and you save on labour when it comes to giving your block patés that finishing touch. Barding sheets also make finishing your liver paté moulds very easy.

BARDING SHEETS

Barding on a roll comes in sheets about 2 mm thick. It is rolled up on a layer of plastic and collagen film. The collagen prevents drying. Our barding on a roll is ideal for the production of filet de saxe.

The large roll also means large savings. The handy packaging makes it quick to work with this product, saving a great deal of time, and also means that there are no trimming losses.

RIND SHEETS

These rind sheets give your meat products a natural look. They are ideally suited for industrial production of hams.

Rind sheets are very economical.

  • You save on handling costs.
  • Your end product looks completely natural. Processed hams or shoulders covered with rind sheet cannot be distinguished from a real ham or shoulder with its original rind.

BACKFAT

Dhagrameat, the backfat specialist 
Rindless backfat is the ideal ingredient for various kinds of cooked sausages and for the production of dried sausage. Different sources and different grades are available according to your requirements. The backfat that we use is of Belgian or Italian origin. backfat from Italian pigs is ideally suited to the preparation of dried sausage and salami.

Trimmings are the cuttings from custom-cut barding. They are ideal for use in cooked sausages. Cuttingfat is also a key ingredient in white pudding, cooked sausage, spreading sausage, game sausage, ham sausage, fine smoked sausage, frankfurters and cooked horse sausage.

RIND

RIND
Rind is the skin of the pig, the outermost layer of pork backfat. The rind that Dhagrameat uses had the fat removed from it and is from good quality. You can also choose between rind of Belgian or Italian origin.

FAT STRIPS AND CUBES

FAT STRIPS AND CUBES 
Fat strips and cubes are both decorative and functional. The strips are ideal for your liver preparations, while cubes provide extra flavour and texture. Our fat cubes and strips are pure, with all rind removed. We also cut them precisely to your measurements. The standard size of our cubes is 6x6 mm; other dimensions are available on request.
